Christmas Day Starter: Black Pudding, Scallop & Caramelised Apple

Add a twist to your Christmas Day starter with our classic flavours of Black pudding, scallop and caramelised apple.

Ingredients:

  • 1 x large King scallop, sliced into 2 pieces
  • 1 x 2cm slice of black pudding
  • 1 x apple quarter, cored and sliced in 2 pieces
  • Salt and pepper to season

Striploin Roast Beef

A step-by-step guide to creating the perfect roast served with a red wine jus.

Ingredients:

2kg Striploin Roast

Pan Sauce Ingredients:

  • 1 shallot, finely diced
  • 2 cloves garlic, minced
  • 200ml of red wine
  • 1 beef stock cube (diluted with 150ml of water)
  • 1 sprig of thyme

Ingredients:

  • 8-10 Brussels Sprouts, cut into quarters
  • 250g Mash
  • 2-3 Roast Potatoes, cut into quarters
  • 150g Ham, pulled apart
  • 3 eggs
  • Oil or Goose Fat
  • Salt & Black Pepper
  • Leftover Cheese (Optional)
  • Cranberry Sauce (Optional)

Festive Glazed Ham

Our poached Ham with orange glaze is the perfect addition to your festive plate. Why not use the leftover glaze to cook your sprouts and green veg.

Ingredients

  • 2/2.5kg Horseshoe Gammon
  • 2 sprigs of Rosemary, Thyme & Sage
  • 1 onion
  • 6 Black Peppercorns
  • 6 Cloves
  • 1 bulb garlic
  • 1 stick cinnamon
  • Peel of 1 Orange
  • 500ml Cider, 1lt water to cover the Ham

  • 200g Orange Marmalade
  • Juice of 1 Orange
  • 2 tsp Dijon Mustard
  • 2 tsp Mustard Powder
  • 1 Pinch of Black Pepper
  • 12 Cloves
